Smoked Salmon with Sweetcorn Fritters:
Fritters, a great finger food or side accompaniment, topped with the finest Smoked Salmon, creme fraiche and salad onion for a fresh tasting snack.
Ingredients
Fritters:
350g sweetcorn
30g fresh coriander
2 medium eggs
75g plain flour
1 tsp baking powder
1½ tablespoon crme frache
6 salad onions, finely chopped
1½ teaspoon vegetable oil
Topping:
150g smoked salmon
9 tablespoons crme frache
3 salad onions
Makes 30
Recipe
Mix the coriander and half of the sweetcorn and blend in a processer until roughly chopped.
Add the eggs, flour, baking powder and crme frache and blend until combined. Stir in the remaining corn and chopped salad onions.
In a pre heated and lightly oiled frying pan drop tablespoons of the batter into the pan and cook for 1 minute on each side.
Serve the fritters topped with a little crme fraiche and smoked salmon. Garnish with shredded salad onion.
