Queen Scallops wrapped in Oak Smoked Bacon:
Tender queen scallops / queenies, combined with the fresh taste of water chestnuts, wrapped in a parcel topped with oak smoked bacon. Sublime.
Ingredients
500g (1lb) queen scallops / queenies
250g ( ½lb) oak smoked bacon
1/4 cup sherry
1 teaspoon sugar
10-14 strips of bacon, cut in half
10-14 water chestnuts
Salt and freshly ground black pepper
Serves 4
Recipe
Mix together sherry and sugar before adding the queen scallops and marinade for at least an hour.
Place one queen scallop and water chestnut on a strip of oak-smoked bacon and wrap the smoked bacon around the parcel, securing with a toothpick or skewer. Do the same for each queen scallop.
Broil all of the parcels until bacon is cooked - about 10 minutes.
