Smoked Salmon with Sweetcorn Fritters
Mix the coriander and half of the sweetcorn and blend in a processer until roughly chopped.
Add the eggs, flour, baking powder and crme frache and blend until combined. Stir in the remaining corn and chopped salad onions.

In a pre heated and lightly oiled frying pan drop tablespoons of the batter into the pan and cook for 1 minute on each side.
Serve the fritters topped with a little crme fraiche and smoked salmon. Garnish with shredded salad onion.
