Marinated Kipper Fillets:
Marinated over night, these kipper fillets will be bursting with flavour and texture. A fresh and full meal, prepare these fillets the night before for a truly satisfying experience.
Ingredients
8 large Manx kippers
1 finely chopped shallot
4 sprigs of dill
4 sprigs of parsley
1 lemon zest, finely grated
120ml olive oil (extra virgin)
90ml white wine vinegar
1 tablespoon caster suger
salt and freshly ground black pepper
lemon wedges, and watercress to serve
Serves 4-6
Recipe
Prepare the Manx kipper fillets by skinning and boning the kippers.
Place the fillets in a shallow dish and mix together the olive oil, shallot, dill, parsley, lemon zest and vinegar. Add salt and ground pepper to season.
Ensure that each kipper fillet is well coated with the mix and cover and chill for at least 24 hours.
When you’re hungry the next day, drain the kipper fillets and pat dry before finely slicing into thin strips.
Marinated kipper fillets are ideally served with a garnish of watercress, dill and lemon with a healthy helping of crusty bread.
