Marinated Kipper
Prepare the Manx kipper fillets by skinning and boning the kippers.
Place the fillets in a shallow dish and mix together the olive oil, shallot, dill, parsley, lemon zest and vinegar. Add salt and ground pepper to season.

Ensure that each kipper fillet is well coated with the mix and cover and chill for at least 24 hours.
When you’re hungry the next day, drain the kipper fillets and pat dry before finely slicing into thin strips.
Marinated kipper fillets are ideally served with a garnish of watercress, dill and lemon with a healthy helping of crusty bread.
