Kipper Risotto
Combine half of the melted butter with the diced shallot and cook gently to soften. Add rice and mix well with the butter.
Once mixed well, add the bay leaf, and spring onions. Stir gently and add the Manx kippers, wine and lime.

Add the warmed chicken stock slowly stirring as you pour, followed by the garlic, salt and ground pepper to season.
Cook for between 20 and 30 minutes, until al dente, before adding the remaining butter.
Serve with parsley and eat as soon as possible while still moist.
